Zombies & Matcha Green Tea Protein Pancakes
These are a few of my favorite things. Well, things that fill my Sundays as well. The hubs and I love all things zombies, and of course we like The Walking Dead. We have enjoyed it since the first season. I’ll admit, I enjoyed that there was a primetime zombie show and was surprised that A&E were the ones to take it on; but found a lot of the first season very predictable. That’s ok, I still liked it. I think the seasons have gotten better as they’ve gone on. This also reminds me of the zombie poster I made awhile back that you can download and stick somewhere if you like. Anyhoo, so we look forward to Sundays.
I do have my own set of rules that must be met before we sit down and relax to watch some zombie goodness. He has to get a workout in with me, or no zombies for him! I’m so mean. But hey, gotta do what you must! I will say today I very proud of him because not only did he get some treadmill time in while I was working out earlier yesterday – but he also knocked out a Turbo Fire HIIT workout in with me last night. And he did it! Go husband. I know when I do a challenging workout I always feel super great about it at the end. Hope he feels that way too.
Now let’s talk pancakes. I’m an advocate of breakfast. I love it. I could it eat every meal. I’ve made green tea protein pancakes a few times, and I think this morning was my favorite version yet, so I’ll stick with this one from now on. I topped these with a little coconut, almonds, and a ginger chia syrup I made. The ginger syrup idea was sparked by my friend Theresa who tried out my first version of this recipe with ginger syrup. Sounded like a good idea to me!
Sundays might just have to become designated pancake days. Because you know, I don’t eat enough of them already during the week as is. PS; My matcha comes from here.
- 1/2 cup oatmeal
- 1/4 cup egg whites
- 1/4 cup cottage cheese
- 1 Tbsp. Almond Milk (if needed to thin batter)
- 2 heaping Tea. Matcha Powder (less if you like a more mild green tea taste)
- 1 Tea. Baking Powder
- Sweetner of Choice
Ginger Chia Syrup
- I mixed about a 1/4 a cup of chia gel, about 2-3 pieces of crystallized ginger finely chopped, and a dash of maple syrup. Heat in microwave for about 30 seconds.
- Mix all ingredients and blend in blender. (Except for the syrup ingredients, duh)
- Makes around 4 medium sized pancakes.
