A Day Late & A Coconut Pancake Recipe

I spent the majority of my morning yesterday cleaning out + organizing my fridge and freezer. I like being organized although lately life has been so insane that it’s kind of gotten away from me – and being unorganized for me just causes me major stress. I have been actively trying to stay on top of things before they get too crazy, hence the early morning purge streak. It wasn’t on my to-do list, but it was getting on my nerves.

I started yesterday morning off with the awesomest bowl of Carrot Cake Oats. They were soooo good, and I’ll have to do a whole recipe dedicated to them. I was loving how my breakfast turned out until one of my friends alerted me to the fact that it was National Pancake day. Whhhhat? I knew that it was sometime this month – and I was already planning the day in my head, I was going to have pancakes for every meal. But from what I had read, it didn’t fall until later in the month. Apparently IHOP gets to decide when National Pancake Day is just because they give free pancakes away. Suckers. Thanks for ruining my plans. But I can say I did have pancakes for dinner. Take that.

I topped mine with greek yogurt that I had added a dash of coconut extract to, smidge of maple syrup, almonds, coconut flakes, and goji berries. The combo of gojis and coconut is one of my favs!

Coconut Protein Pancakes

Ingredients

  • 1/2 cup Oats
  • 1/4 cup Cottage Cheese
  • 6 Tbsp. Egg Whites
  • 1 Tea. Coconut Oil melted
  • 1/2 Tea. Baking Powder
  • 1 Tea. Coconut Extract
  • 1 Tbsp. Unsweetened Coconut Flakes
  • Sweetner of Choice
  • 1 Tbsp. Almond Milk - if needed to think batter

Instructions

  1. Combine everything except the Almond Milk and blend together with blender. Add additional milk if you feel like your batter needs it.
