Merry Christmas + Gingerbread Protein Pancakes

I hope you all had a Merry Christmas (or happy holidays). My household is still recovering – meaning, my house is still a freaking wreck. I may get it clean by the end of the week, but that might just be wishful thinking. At least the tree is already down. Yes, I’m that girl. I had the husband pack it up and put it away last night.

On Christmas eve we enjoyed lots of food with my father, step mom and her family. The kids had a good time opening their presents – and we ate a lot, and it was good. After spending time with the family, we came home to do our own little family Christmas Eve tradition. Every Christmas Eve my kids get to open a new pair of jammies to sleep in to prepare for Santa.

They also get a new DVD that they haven’t seen, and spend some time together watching the movie in their new jammies before bed. But this year instead of opting for a movie, I decided a board game instead. I figured we would get more use out of it I picked up Brain Quest Smart Game, and the kids seemed to enjoy it.

As for Christmas breakfast, we really don’t have any sort of tradition. I myself ate some gingerbread protein pancakes that I threw together because they felt appropriate.

They were one of those first recipe test successes. Gotta love those, so I wanted to share them now instead of putting them on the forever growing recipe to do list.

Gingerbread Protein Pancakes

Ingredients

    Dry
  • 3 Tbsp. Coconut Flour
  • 2 Tbsp. Oat Flour
  • 2 Tbsp. Vanilla Protein (I use GNC 100% whey)
  • 3/4 Tea. Gingerbread Spice
  • 1/2 Tea. Baking Powder
  • Sweetener of choice
  • Wet
  • 1/4 C Almond Milk
  • 2 Tbsp. Greek Yogurt
  • 1 Tea. Vinegar
  • 1/3 C. Liquid Egg Whites
  • 1/2 Tbsp. Black Strap Molasses

Instructions

  1. Mix dry ingredients well in small bowl breaking up lumps, set aside. In a separate small bowl mix wet ingredients and let set while your griddle is heating. Mix wet with dry and cook pancakes in pan or on griddle. I got about 5 small-medium pancakes out of this.

I ate mine with homemade maple chia syrup – and after the first bite I decided that pecans would be awesome on top too. They were.

I know some of you are probably thinking “what the heck, I don’t have gingerbread spice!”. I’ll admit, unlike pumpkin pie (I also have that recipe too here), or apple pie, which you can find in the stores; I’ve never seen gingerbread spice. So I’m including a recipe for that as well. Other than the spice though, it’s important not to leave out the molasses, otherwise they won’t have a true gingerbread flavor.

Gingerbread Spice

Ingredients

  • 1/4 C cinnamon
  • 1/4 C ground ginger
  • 1/8 C nutmeg
  • 1/8 C allspice
  • 1/8 C ground cloves

Of course you can double, or triple the amount and stash it away. I need to make myself more and will be doing such. Also don’t be afraid to use this spice mix in place of cinnamon in any recipe. It can give things a special flavor and it’s a nice change of pace to just plain old cinnamon. I feel the same way about my pumpkin spice too though. I interchange that one a lot with cinnamon.
