No Bake Birthday Cake Protein Bites

Over the past few days my minime turned 8. Yep, it was 8 years ago now I pushed out this 10 lb. 2oz piece of sass – note: I was going to say little there, but there was nothing little about her.

We have a sprinkles mandatory on your birthday rule in this house which my chickadees are always willing to abide by, so it was rather fitting when my daughter said her cupcake of choice for this year was confetti cake.

Since I was playing in sprinkles anyway, I thought some protein bites for myself might be nice. All lovingly inspired by the minime of course.

These protein bites come together so quickly and I usually have some variation of protein bites stashed in my fridge for when I want to quick sweet bite of something.

Now don’t take this as I was replacing enjoying my daughters Birthday cupcakes with a healthier option. Yes, these are definitely yummy enough to do that if that’s your choosing – But, I did I mention I pushed out that 10 lbs 2 oz myself??! Yeah. I’m going to eat some of your cupcakes too. No Bake Birthday Cake Protein Bites


  • 1/2 C. Cellucor Cor-Fetti Whey
  • 1/4 C. Coconut Flour
  • 2 TBSP. Almond Butter
  • 1/4 C. Almond Milk
  • Optional: Sprinkles


  1. Mix your protein powder and coconut flour making sure any clumps are removed with a fork. Combine milk and almond butter until mixed well. Roll into balls and store in fridge.


Something important to note about these, if you do choose to roll them in sprinkles, after a day or so in the fridge the sprinkles will turn into a hot mess. I didn't really think about this when I rolled mine. Next time I will just roll them before I eat them if I decide I want the added sprinkles :)

A few other variations and modifications you can do with this recipe:

  • If you want a “cakier” flavor, you can add a few drops of butter extract (yes, it’s a thing – and it doesn’t take much)
  • You can also use a milder nut butter for a truer cake taste: coconut butter or cashew butter would be awesome.
  • You can mix some more sprinkles into the mixture.
