Rocky Road No Bake Protein Bites
Every week I make a batch of no bake protein bites, sometimes twice a week depending on how fast they go.
It’s fun to come up with new flavor combinations – and usually a batch of bites aren’t premeditated but rather determined by what jug of Cellucor Whey I grab off the top of my fridge first. But this time I wanted to try to include some of these Mini Mallow Bits. You know the little Marshmallows that come in packages of hot cocoa mix? Yeah those.
Rocky Road seemed like a good flavor to throw together with these babies. Mainly I wanted to use them because they were tiny and cute, although I think now that I’ve made them, when I make them again I’m going to try just regular mini marshmallows in their place.
I think bigger bites of marshmallow would make these even more amazing. Also after a few days in the fridge the Mallow Bits dissolved into my chocolatey goodness. Which of course may or may not be a problem for you depending on how long you can make these last. I used peanuts in mine simply because it was the nut butter I used, you could use another if you wish.
I also think next time around I would add more chopped peanuts (or pecans) the peanuts in my bites were just because I used a chunky variation of peanut butter.
- 1 C. Chocolate Protein Powder ( I use Cellucor Molten Chocolate Whey
- 1/2 C. Coconut Flour
- 2 Tbsp. Almond Flour
- 2 Tbsp. Cocoa Powder
- 1/4 C. Chunky Peanut Butter
- 1/2 C. Almond Milk
- 1/4 C. Mini Mallow Bites (or mini marshmallows)
- Mix dry ingredients well in a bowl making sure to remove all clumps. Add milk and peanut butter. Add marshmallows last. Chill in fridge for about 30 mins, then form into small balls. Store in fridge.
