What I Ate Wednesday: Squash No-odles
So yes, it’s no news that most morning I eat oats of some variation. And it may be a little odd that for a few days the last few weeks I’ve actually rolled out of bed and wanted something other than oatmeal. Le gasp.
This omelette had some ham in it (no cheese), plus an english muffin. One side with strawberry preserves and the other with favorite sunflower butter.
Since it’s been warmer out my vitamix has been getting a workout. I’ve been snacking on lots of protein smoothies (usually as a preworkout snack). This morning I had one that I threw frozen strawberries in. Like a dang strawberry shake I swear. It was made with my new most favorite protein : GNC Pro Performance® 100% Egg Protein. It’s. So. Good. And the nutritional facts are just awesome.
I’ve also been noshing on my Apple Pie Protein Bars (recipe here) the last couple of days.
If you read my post yesterday you would’ve read about all the good veggies I have been getting from my Dad’s garden the last few weeks. He’s been so kindly giving me loads of squash – so I’ve been making these squash no-oldes. Get it? No-noodles? Oh well, I have to amuse myself sometimes.
They are really simple to make. Get a squash, clean it, and then peel the sucker with one of these:
Put your noodles in a bowl, cover it with plastic wrap, and nuke for a few mins to steam the squash. Bam. Noodles. This type of peeler is called a Julienne Peeler and you can do neat things with it. This is my particular one and I snagged it at TJMAXX for 3 bucks, woot. I believe it was on Erica’s blog that I first saw such a contraption – so props to her on that. I had been on the lookout for one ever since.
